For a Mundayne.

Lasagna Cupcakes. 


1. Lasagna Sheets (1 for 2 cups) 
2. Olive Oil (for greasing and cooking) 
3. Garlic (finely chopped) 
4. Sage 
5. Rosemary 
6. Fresh Basil 
7. Red Bell Peppers (diced)
8. Yellow Bell Peppers (diced)
9. White mushrooms (diced)
10. Cherry Tomatoes (chopped) 
11. White wine vinegar
12. Ricotta cheese
13. Parmesan Cheese
14. Salt and Pepper
15. Secret Ingredient


This is a recipe truly for the haphazard and chaos loving cook because no matter how messy or how disproportioned your ingredients are in this dish, you will always find yourself with a hearty, warm and soulful treat at the end of 20 minutes or less. 


Begin to boil the lasagna sheets depending on the number of cups your muffin tray can afford. While the pasta is on the boil, be careful to allow the sheets to boil separately and without breaking, however in the event that they do break, fear not! this dish does not demand visual perfection. 


In a large saucepan, commence the sauce making! Add a reasonable amount of olive oil and throw in the herbs on a soft flame and allow your kitchen to be enveloped in aromas of sage and rosemary. 
After about a minute, add in the tomatoes, the bell peppers and white mushrooms. Allow for the entire mixture to reduce and soften. Leave the sauce on for about 10 minutes to get all the elements of the sauce to meet and greet. Lastly, add the ricotta cheese and basil leaves and allow the sauce to cool for about 5 minutes.


Grease a muffin tray with olive oil. Cut the lasagna sheets in half and gently place the sheet over a greased muffin mold and place inside. The arrangement will take the shape of a flower at this point.
Place a dollop of the sauce in the lasagna cup and grate some parmesan cheese over the sauce. At this point, you could either break away smaller pieces of the lasagna sheet to further layer the dish or just leave it at the single layer. Repeat this process for the rest of the muffin molds. 


Place muffin tray in an oven and bake for about 20 minutes. The end result should leave you with 4 or more robustly flavoured and saucy lasagna cupcakes that are crisp and firm on the outside and warm and soft on the inside. Serve immediately! This dish does not take well to being cold or reheated!


Enjoy with some red wine and familial company.
